Have you Tried Cauliflower Wraps?!?!?

I recently popped into Jackson’s Real Food Market (Johannesburg, South Africa), a real gem of a store for us health freaks. This fantastic little store has just about every cool health item you can think of – from gluten free breads, banting friendly cereals and breads, nut butters, sugar free ice-cream, organic produce, grass fed beef, incredible dairy and the oh so amazing cauliflower wrap. With Banting being all the rage on the health front these days, cauliflower has become an increasingly popular substitution for rice, mash, pizza and now wraps. Very low in carbs, incredible in texture and so damn awesome to stuff with delicious veggies and protein, these wraps are everything! These are any banter’s dream! Expensive yes – but worth every cent. I highly recommend these beauties to anyone looking for healthier alternatives. This is what it’s all about. See?! We don’t have to deprive ourselves – we don’t have to give up anything – all we need to do is replace the bad with the good – and these wraps are exactly that! Made with eggs, tapioca flour, psyllium husk, cauliflower, olive oil and salt, these wraps provide plenty of healthy fats, protein and fibre to keep you feeling satiated for hours! Trust me – just one wrap and you feel super full! It’s amazing!
And what would an epic wrap be without an epic recipe...
Middle Eastern Chicken-Tahini Wrap
Serving Size: 1
Prep time: 10 mins
You will need:
1 packet cauliflower wraps (from Jackson’s Real Food Market)
Half a cucumber – spiced into julienne strips
6 large Rosa tomatoes, sliced
2 tbsp. natural Tahini
2 chicken breasts – cut into strips
1/2 block feta cheese – crumbed
1 tbsp. coconut oil
1 tsp. crushed garlic
1 tsp. dried rosemary
1 tsp. dried oregano
Salt and Pepper to taste
Instructions
Step 1: Prepare Chicken
Cut chicken into thin strips
Heat coconut oil in large frying pan on high heat
Add dried herbs and garlic and fry for 30 seconds
Add chicken, salt and pepper
Reduce heat to medium and sauté chicken for approximately 7 minutes until cooked through completely
Remove chicken from heat and cover until ready to use
Step 2: Build Wrap
Remove cauliflower wrap from packet – heat slightly on low heat in the oven if desired
Slice tomatoes and cucumbers.
Pile cucumber strips and tomato sliced flat in the middle of the wrap
Add chicken strips
Step 3: Finishing Touches
Top with tahini and crumbled feta
Roll wrap and hold together using a toothpick to keep wrap sealed
