Mocha Latte Quinoa Mug

Let’s face it, we all love coffee right?! What would a morning be without a warming cup of coffee to kick-start the day. I don’t know about you, but I am a complete zombie without my coffee. That is why I am in looove with this recipe. Definitely one of my favourite creations to date. What better way to enjoy breakfast than to add little sneaky coffee to your porridge! This recipe is rich in detoxifying spices, is low GI, a great source of protein (quinoa is a high protein grain), and is free from gluten, dairy and sugar. This is one of those classic go-to recipes that you can enjoy any time of day…(even dinner, which I have totally done a few times hehe). I hope you enjoy!
Ingredients
1 cup brown or white quinoa
2 cups boiling water
Pinch salt
1 tsp. vanilla extract
2 tsp, xylitol or stevia
1 shot espresso
½ cup coconut milk
½ tsp. cinnamon
Pinch nutmeg
½ tsp cacao powder
Instructions
Step 1:
Add water, pinch salt and vanilla extract to medium sized cooking pot and place on stove on high heat
Bring to water to the boil
Step 2:
Reduce heat, add quinoa and cook for 7-10 minutes until quinoa begins to soften, and a light ring develops around the edges of each grain. Water should be fully evaporated once quinoa is cooked
Step 3:
Once cooked, remove from heat and add coconut milk, xylitol/stevia, espresso, cinnamon, nutmeg and cacao powder.
Stir thoroughly and place back on medium heat for another 2 minutes
Step 4:
Place a generous amount in a large hearty mug, sprinkle with a little cinnamon and desiccated coconut. Best served nice and hot.
