Strawberry Crunch Oatmeal

There is nothing like a good breakfast that just hits the spot -and I have to say that this particular recipe does just that! I absolutely love the little bit of crunch added to this oatmeal It really makes this bowl of goodness extra delicious. Prep time: 20 mins
Sevings 1-2
Ingredients
1 cup rolled oats
1/2 cup water
1/2 cup coconut milk
1 tsp, coconut oil
1/4 tsp. cinnamon
1/4 tsp. ground cloves
1 tsp. stevia / xylitol
5 strawberries - chopped
Oat Crunch
2 tbsp. rolled oats
2 tsp, coconut flakes
1/4 tsp coconut oil
1/4 tsp cinnamon
1/2 tsp. xylitol/stevia
Instructions
Pre-heat oven to 180⁰C on Grill
Step 1:
Prepare Oat Crunch
Place oats, coconut flakes, coconut oil, stevia/xylitol and cinnamon in a bowl and mix together thoroughly
Once mixed, lay out on a lightly greased baking tray
Place in oven for 5-10 minutes watching continuously
Once lightly toasted, remove from oven and set aside
Step 2:
Prepare Oatmeal
In a small cooking pot, bring water and coconut to the boil
Add oats, cinnamon, cloves, coconut oil and stevia/xylitol and cook on medium heat for 10 minutes
Step 3:
Once oats are soft and porridge-like, reduce heat to low and add chopped strawberries
Allow to simmer for 2 minutes until strawberries have softened and turn the oatmeal slightly pink
Remove from heat
Sprinkle in the oat crunch and top with some fresh strawberries
