Very Berry Chia Pudding

Pudding for breakfast? Yes please! This recipe is packed with healthy omega oils and keeps you full for hours. Chia pudding is definitely one of my top three favourite breakfasts. You will see how the Chia seeds swell to five times their size when soaked. Truly an amazing seed straight from mother nature and into your belly!


2/3 cup chia seeds – soaked in milk of choice below

2 cups unsweetened milk of choice (recommended – almond milk)

1 tbsp. flaked almonds

1/2 tsp. pure vanilla extract

5 chopped and pitted dates

½ cup frozen berries

2 tsp. desiccated coconut

1 tsp. xylitol

1 tsp. cinnamon

1 tsp. nutmeg


Step 1:

Place chia seeds in in milk of choice and soak overnight

Step 2:

Place chia seeds, berries, vanilla extract, coconut, dates, xylitol, cinnamon and nutmeg in food processor and blend for 1 minute until smooth and creamy

Step 3:

Add a little more milk of choice if consistency is too thick

Top with flaked almonds and Nature’s Choice miracle seed mix (available at Dischem)

Enjoy this delicious pudding…for breakfast!
