3 minute Banting Cinnamon Roll Mug Cake

I created this recipe because I adore cinnamon rolls but I’m not a fan of the prep time and more obviously I am definitely not pleased with how unhealthy these can be. My version of this delicious treat can be made, ready to eat in 3 minutes flat. This cake is surprisingly moist, it has every flavour of a cinnamon roll, it’s easier and last but definitely not least, clean-up is a breeze! I love the idea of mug cakes because really, what dessert can be made so quickly and taste so decadent yet still be low in carbs? – That’s right...this cake!
Ingredients
Servings: 1
Prep Time: 3 mins
Cake
2 tbsp. applesauce (unsweetened)
1 tbsp. coconut oil
1 egg
1 tbsp. coconut milk
¼ tsp. vanilla extract
¼ cup. + 1tbsp. almond flour
2 ½ tbsp. xylitol
¾ tsp. ground cinnamon
¼ tsp. nutmeg (optional)
¼ tsp. baking powder
Pinch salt
Cream Cheese Icing
1 tbsp. Cream Cheese
2 tbsp. xylitol
1 tsp. full cream milk
½ tsp. vanilla extract
Instructions
Step 1:
Prepare Cream Cheese Icing by whisking cream cheese, milk, vanilla and xylitol in a bowl with a fork until smooth and creamy.
Set aside
Step 2:
Combine all ingredients (minus Cream Cheese Icing) in a mug then whisk together with a fork until combine and nearly smooth.
Step 3:
Microwave mixture on high power for 1 minute then check cake for doneness. If it is not fully cooked microwave for an additional 15 seconds.
Serve warm topped with Cream Cheese Icing and a little sprinkle of cinnamon
