Cara's Choc Date Squares

These are so scrumptious, I just can’t wait for you to try!! These still need to be kept a treat because they are high in natural sugars (from dates) but are a great way to get energized before a workout. I love incorporating dates into my cooking – they add natural sweetness, are high in fibre and are so nutrient dense that army veterans can even live on them to stay healthy and energized when food is scarce. Now that makes dates truly worthy of the “miracle food” title. I use eggs in this recipe so these squares are also high in protein. A perfectly delicious, nutritious and healthy snack…oh and a huge hit with the kids!
Serves 10 | Ready in 50 mins
Ingredients
125g almond flour
1 teaspoon baking powder
1 pinch salt
150g xylitol
3 eggs, beaten
1/2 teaspoon vanilla extract
200g chopped pecans
350g chopped dates
2 tbsp. coco powder
4 tbsp. desiccated coconut
Instructions
Preheat oven to 170 °C
Step 1:
Grease and flour a 20x30cm tin. Sift together the almond flour, baking powder and salt. Set aside.
Step 2:
In a large bowl, cream together the xylitol and eggs, then stir in the almond flour mixture. Stir in the vanilla, pecans and dates.
Step 3:
Pour mixture into prepared tin. Top with hazelnuts and pecans
Step 4:
Bake in the preheated oven for 35 minutes, or until a skewer inserted into the centre of the cake comes out clean. Cut into squares while cake is still warm.
Step 5:
For an ultra decadent dessert, melt some sugar free dark chocolate in a small pan until thick pouring liquid forms.
Step 6:
Drizzle melted chocolate over Choc-date squares and enjoy!
