Choc-Peanut Butter and Date Ice-Cream

Thank goodness for this recipe! Ice-cream is one of my weaknesses and to be able to enjoy a same-same but different variant whenever I want is such a treat! Whoever would have thought that frozen bananas could produce an ice-cream like dessert that tastes just as good (if not better) than the real thing. So if you are craving dessert, this is definitely a recipe for the books!

Preparation Time: 15 minutes
Ingredients
2 Peeled bananas frozen (keep a batch of these in your freezer for emergency dessert cravings)
1 tbsp. Organic natural peanut butter (unsalted and unsweetened)
1 tbsp. Tahini
2 tsp. Cacao powder
5 large pitted dates
2 tbsp. Desiccated coconut
ΒΌ cup almond milk
1 tbsp. Cinnamon
1 tp. vanilla extract
2 tbsp. Raw unsalted organic peanuts -crushed
Pinch Salt
For Texture
2 tbsp. Raw unsalted organic peanuts -crushed
5 chopped pitted dates - Medjool dates are best
Instructions
Step 1:
Place dates, peanut butter, tahini and almond milk in food processor and blend to form a thick paste
Step 2:
Add remaining ingredients to paste and blend for 1 minute until a smooth, creamy, ice-cream like mixture is formed.
If mixture is too thick, add a little more almond milk until the desired consistency is achieved.
Be careful not to over-blend as this will reduce the ice-cream like consistency
Step 3:
Pour nice-cream mixture into large mixing bowl
Stir in chopped dates and crushed peanuts
Serving Suggestion
Serve immediately and top with flaked almonds and a drizzle of maple syrup
Storage: Store in airtight container and place in freezer
