Date and Pecan Pie Protein Pops

If your sweet tooth is hounding you, nothing satisfies more than the combination of sweet juicy dates meets pecan crunch. I find these to be the ultimate replacement for traditional pecan pie.

Ingredients

500g pitted chopped dates

2 tbsp. melted coconut oil

2 tbsp. water

5 cups pecan nuts

2 tsp. cinnamon

1 tsp. vanilla extract

1 scoop whey or raw vegan protein powder

1 tsp. coconut essence

3 tbsp. desiccated coconut


Topping

2 tbsp. cacao powder

2 tbsp. cinnamon

2 tbsp. desiccated coconut



Instructions

Step 1
Add pecan nuts to food processor and blend until finely chopped. Empty out intobowl and rinse food processor.

Step 2
Combine chopped dates, coconut oil and water into food processor and blenduntil dates form a smooth paste. If the mixture is too sticky and does notblend properly, add small amounts of water, blending in between each additionto create a smooth paste.

Step 3
Add finely chopped pecans, cinnamon, vanilla extract, protein powder, coconutessence and desiccated coconut to date mixture
and blend further until smooth, sticky mixture is formed.

Step 4
Take spoonful’s of the completed mixture and roll into small balls using thepalms of your hands.

Step 5
Fill a bowl with cacao powder, cinnamon and coconut and mix together to form adry dusting 
Dip each ball into dry mixture and coat with dusting
Refrigerate for half an hour

Serving suggestion:
Serve on top of double thick plain Greek yoghurt
Serve protein pops chopped over a bowl of raw organic Bircher muesli soakedovernight in coconut milk
