Healthy Stawberry Ice-Lollies

Summer holidays are the perfect time for something cool and fresh. Store bought ice lollies are often laden with sugar, that’s why I prefer to make my own homemade ice-lollies. That way I know exactly what ingredients are going in, and I can make sure that they are nutritionally balanced too! These ice-lollies are a rich source of potassium, high in anti-oxidants (from the strawberries, full of fibre and packed with healthy fats. I only use a little xylitol to sweeten just a bit more, but this is not essential as the fruit contains natural sugars. These are such a hit with the kids, and at least you don’t have to worry about any sugar highs. The coconut cream lowers the glycaemic index of these lollies which means that both you and your kids will have sustained energy after enjoying these delicious treats! I hope you enjoy!
Ingredients
Serves 6 | Prep Time 10 mins | Ready overnight
4 Medium Bananas
12 x Strawberries (180g)
1 can coconut cream or 1 cup full cream yoghurt
1 tbsp. cacao powder
2 tsp. xylitol
Instructions
Step 1:
Place all ingredients into a blender and blend thoroughly until smooth
Step 2:
Divide mixture into 6 lolly makers and freeze overnight
Serve frozen and enjoy on a hot summers day!
