Low Carb Paleo Hot Cross Buns

The most traditional food of Easter is not to be forgotten, even if you are eating clean. This hot cross bun contains absolutely no refined grains or sugars, is dairy-free, rich in antioxidant and anti-inflammatory spices and packed with delicious flavour. No sugar crashes or energy slumps with these, and no guilt either so what are you waiting for, try em!

Serves 8 | Ready in 35 mins

Ingredients

Low Carb Hot Cross Buns

½ cup almond flour

30g psyllium husks

1 tsp. baking powder

2 tbsp. granulated stevia / xylitol / coconut sugar

½ tsp. salt

1 tsp. vanilla extract

½ tsp. mixed spice

½ tsp. cinnamon

½ tsp. ground cloves

4 eggs

1 cup boiling water

¼ cup raisins – coated in almond flour

¼ cup cacao nibs – coated in almond flour

Icing

Stevia or erythritol icing mix

1 tsp vanilla extract

Enough water to make a smooth paste

Instructions

Preheat Oven to 180°C

Step 1: Prepare Hot Cross Buns

Mix all the dry ingredients in a mixing bowl. Add the eggs and mix using a whisk. Add the boiling water and mix until evenly combined to form hot cross bun dough.

Step 2:

Roll dough into 8 equal balls and place on a baking tray. Oven bake at 180°C for 20-30 minutes until golden on the outside and cooked in the centre.

Step 3: Prepare Icing

Combine stevia icing mix with vanilla and water to form a smooth paste

Step 4:

Mark each hot cross bun with a cross using the stevia icing mix.


Serve hot and enjoy!
