My Favourite Vegan Choc-Avo Mousse

While avocado and chocolate may sound like a bit of an odd combo, believe me, when it comes to a decadent, creamy mousse, this couldn’t be further from the truth. What is awesome about avocado, is that is has quite a neutral taste so you can flavor it in pretty much any way you like and it will take on that flavor really well. This recipe is quite possibly the quickest, simplest, tastiest chocolate mousse there is. And of course the best part is that this mousse is nutrient rich, high in healthy keep-you-full-for-long fats, contains no sugar and is vegan too! Winning all round!
Serves 1-2 | Ready in 6 mins
1 large ripe avocado
1/4 cup raw cocoa powder
1/4 cup coconut cream
2 tsp xylitol (or maple syrup)
1 tsp natural vanilla extract
½ tsp cinnamon
1 tbsp. coconut oil
1 tbsp vegan protein powder (optional)
Toppings: sliced toasted almonds, chia seeds, frozen mixed berries, almond butter, cocoa nibs, coconut flakes, desiccated coconut.
Purée the avocado until smooth in a high speed blender.
Mix together the cocoa powder and coconut cream until well combined and then add to the avocado.
Stir in cinnamon, protein powder, cinnamon, xylitol, and vanilla extract.
Place mousse into a serving cup or bowl and finish off with your favourite toppings (toasted almonds add a lovely crunch, and frozen berries give the mousse a great fruity twang!).
Refrigerate until ready to eat
