Vanilla-Coconut Protein Cupcakes

Do you love coconut as much as I do? Well if you do, this is the perfect recipe for you! High in protein and packed with healthy fats and oils, this delightful healthy treat can be enjoyed for breakfast or as a nutritious snack...and is sure to satisfy any craving!
Makes approximately 12 cupcakes
Ingredients
2 cups almond flour
3 bananas - thoroughly mashed
½ cup milk of choice
1 scoop vegan protein powder
1 large free range egg
1 tsp baking powder
1 tbsp. xylitol/ stevia
1 tbsp. tahini
1 tbsp. macadamia nut butter
2 tsp. vanilla extract
1 tsp. cinnamon
1 tbsp. cacao nibs
2 tbsp. almond flakes
½ cup desiccated coconut – to sprinkle over batter
Instructions
Preheat oven to 180⁰C
Step 1:
Combine all ingredients into large mixing bowl and blend with egg beater for 2 minutes until mixture is fluffy and light
Step 2:
Place batter into paper or silicon cupcake holders (I use reusable silicon cupcake holders as these are non-stick)
Fill each cupcake holder ¾ way full
Sprinkle top of each with desiccated coconut
Step 3:
Place coconut-sprinkled cupcakes into oven and bake for approximately 20 minutes.
Prick with fork to see if cooked
Once cooked through, remove from heat and allow to cool
Serving Suggestion
Top with coconut cashew cream (see recipe HERE)
