Vegan Grain-Free Berry Crumble

I love a good crumble! That delicious combination of warm crunch and fruity bliss is a total flavour explosion! So I had to try my luck at a healthy version of crumble of course! And here it is…vegan, grain free, and utterly delicious. I love that this recipe is nutrient dense too – rich in healthy fats, nut protein, antioxidants (from the berries) and anti-inflammatory spices. Serves 8 | Ready in 50 mins
Preheat oven to 180°C
Ingredients
1 tbsp. coconut oil
¼ cup pure raw honey or pure maple syrup
1 tbsp. coconut milk
2 tsp. pure vanilla extract
½ cup almond flour
¼ cup crushed almonds
½ cup crushed pecans
¼ tsp. cinnamon
¼ tsp. ground cloves
1 tsp. baking soda
¼ tsp. salt
4 cups of frozen or fresh mixed berries (or any fruit)
1 additional tbsp. coconut oil
1 lemon, juiced and half of it zested
Instructions
Step 1:
In a baking dish, add 1 tbsp. coconut oil, fruit, fresh lemon juice and zest from half that lemon.
Step 2:
In a separate bowl, mix together 2 tsp. coconut oil, honey, coconut milk and vanilla.
Step 3:
Mix in almond flour, crushed almonds, pecans ground cloves, cinnamon, baking soda and salt until it forms a sticky crumble
Step 4:
Drop crumble by spoonfuls all over the top of the fruit. You can leave it as spoonfuls or smooth it out.
Step 5:
Bake for 35 minutes or until fruit is bubbly and crumble is golden brown.
I love to serve this dish with a big dollop of whipped coconut cream! YUMMY!
