Strawberry-Choc Shortcake Swirl

What could be more decadent that coconut milk, strawberry and cacao all blended up into one moreish smoothie dessert…and yes, 100% guilt free too! With added Maca, this delicious delight is great for regulating hormones and improving energy.

Preparation Time: 6 minutes
Ingredients:
2 Peeled frozen bananas chopped into quarters
½ cup Coconut milk
1 tbsp. Maca powder (Malt flavoured Superfood -available at all health stores)
1 tbsp. Natural sweetener of choice (Xylitol/ stevia/raw honey/agave)
1 tsp. Vanilla extract
4 Large strawberries
1 tbsp. Desiccated coconut
2 tsp. Cacao powder
1 tbsp. Cacao nibs
1 tsp. Cinnamon
1 tsp. Nutmeg (optional)
Toppings
5 Crushed pecans
2 tsp. Desiccated coconut
Instructions
Step 1:
Create Smoothie base
Combine frozen bananas, coconut milk, Maca powder and sweetener into food processer and blend until mixture is thick, creamy and ice cream-like.
Step 2:
Divide mixture in half
Leave half of mixture in food processer and place the other half in a bowl
Step 3:
Strawberry Layer
Add strawberries, vanilla extract and desiccated coconut to mixture that is in the food processor.
Blend until all ingredients are thoroughly combined.
In order to maintain thickness take care not to over blend
Empty out strawberry layer into a separate bowl and rinse food processor
Step 4:
Chocolate Layer
Place other half of base mixture into food processor
Add cacao powder, cacao nibs, nutmeg and cinnamon and blend until all ingredients are thoroughly combined
Step 5:
Spoon alternating layers of chocolate and strawberry into a medium sized jam jar.
Top with crushed pecans and coconut shavings
Serve Immediately
