Asian Spiced Rainbow Trout with Microgreens

No matter what the occasion, there is always a way to make even the most indulgent of celebrations a healthy one. Rich in potassium and Phosphorous, trout makes for a fantastic an less expensive salmon-like dish, and is especially rich in Omega 3's - meaning you should enjoy it regularly! Store bought teriyaki sauces are usually laden with MSG and added sugars, so this recipe includes my homemade Teriyaki sauce which contains no sugar, but rather xylitol instead. This is a regular dish in my home - its tasty, nutrient dense, low in carbs and flavourful! I hope you love it as much as I do.

Preheat Oven to Grill at 360°C

Serves 2 | Ready in 30 mins

Ingredients

2 x 200g Rainbow trout fillets

½ cup gluten free soy sauce

1 tsp. fresh grated ginger

1 tsp. fresh crushed garlic

1 tsp. xylitol or coconut blossom

1 tbsp. natural unsweetened peanut butter

2 tbsp. sesame oil

1 fresh green chilli – finely chopped

Instructions

Step 1:

Combine all ingredients (expect trout) in a blender and blend thoroughly to make marinade. Allow to stand for 30 mins to allow all flavours to infuse.

Step 2:

Place trout fillets into an oven proof dish. Pour marinade over trout fillets. Gently poke trout with a fork to allow marinade to seep into fillets. Cover with plastic film and refrigerate for 6 hours or overnight. (This is the secret to perfectly flavoured fillets)

Step 3:

Preheat oven on grill at full 360°C. Grill trout fillets in marinade for 20 minutes making sure to turn fillets every 5 minutes so that cooking is nice and even. At about 15 minutes, turn fillets so that skin is facing upwards. If possible increase the level of the oven dish relative to the grill so that the fish is as close as possible to the grill element. Allow skin to become crisp, about 5-6 mins. Be sure to watch closely to prevent burning.

Once skin is nice and crisp and trout is cooked through, remove from heat, and garnish with fresh microgreens.

Serve along with sliced avocado, grain free seeded crackers and a generous dollop of crème fraiche. Yumm!...and Low carb too! This is the perfect combination of omega 3’s to ensure a passionately charged evening.
