Egg-Plant Bun Teriaki Burgers

Burgers are always the hardest thing to stay away from right? Well not to worry...no need to cut these out at all. Simply switch up a few key ingredients and you have yourself an ultra yummy, perfectly healthy burger. Hope you love this recipe!
Serving Size: 4-6
Preparation Time: 30 minutes
Patty Ingredients
6 grass fed 100% pure beef burger patties
Himalayan rock salt and black pepper to taste
Melted coconut oil to grease baking tray
Eggplant Bun Ingredients
1 large eggplant thickly sliced in rounds
Olive oil
Salt to taste
Salad Ingredients
4 tomatoes – finely chopped
1 red onion – finely chopped
1/2 cup crumbled feta
3 tsp. dried oregano
2 tsp. dried thyme
¼ cup fresh lemon juice
2 tbsp. olive oil
2 tsp. Himalayan salt
Teriyaki Marinade Ingredients
½ cup soy sauce/tamari
½ chili – finely chopped and seeds removed
2 tsp. xylitol
1 tsp. psyllium husk or corn flour to thicken
1 tbsp. milk of choice
1 tsp. ground ginger
1 tsp. olive oil
Instructions
Step 1:
Preheat oven to 180⁰C
Lightly grease 2 baking trays with melted coconut oil
Step 2:
Prepare marinade
Place all ingredients for Teriyaki marinade except thickener into small cooking pot
Bring to boil
Remove from heat and stir in thickener
Place back on heat and allow to thicken– add more corn flour/psyllium husk if thicker consistency is required. Alternatively, if too thick, add a little water
Remove from heat and allow to stand
Step 3:
Brush teriyaki marinade over burger patties coating each patty thoroughly
Place in oven and bake for approximately 10 mins
When almost cooked, change oven to grill mode and grill for another 5-7 mins
Remove from heat
Step 4:
While burgers are cooking prepare Salad:
Combine all salad ingredients in large bowl
Add olive oil, herbs and seasoning and toss thoroughly
Step 5:
Lightly grease baking sheet
Place eggplant rounds on baking sheet and baste with olive oil
Season as desired
Grill in oven for approximately 10 mins
Step 6:
Plate up eggplant slices on individual serving dishes and place a tbsp. of salad, a burger patty, and another eggplant slice on top, on each plate
Top with Tahini Mayo and serve with a side of sweet potato wedges
Serving Suggestion
Serve with TAHINI MAYO and a side of SWEET POTATO FRIES
