Fragrant Low-Carb Stir Fry

The fragrant Thai flavours of green curry paste, ginger, soy, garlic, coriander and honey make this low calorie stir fry an amazing option for the whole family to enjoy. Whether you prefer vegetarian, chicken or beef, this recipe can be easily adapted to suit any palate or preference. A great go-to dish when you are short on time to cook dinner.
Cooking Time: 15 minutes
Serves: 4-6 people
Ingredients
2 cups red cabbage - diced
2 cups green cabbage - diced
2 cups carrots -julienne
(I buy this ready prepared trio from Food Lovers Market to save time)
1 cup mange tout
1/2 punnet bean sprouts
200g chicken/beef strips/shrimps
3 tsp. Green curry paste
1 tsp. crushed garlic
1 tsp. crushed ginger
1 punnet fresh coriander - destalked
2 tbsp. macadamia nut oil
2 tsp. raw honey
2 tsp. dried organic oregano
2 tsp. Himalayan pink crystal salt
1 tsp. ground black pepper
Handful of sunflower seeds - pre-toasted
handful of shaved almonds- pre-toasted
200g Shirataki noodles (I use 1 packet of No Calorie Noodles - available at Dischem South Africa)
Garnishing:
1 fresh lime sliced into quarters
Handful of coriander leaves
Instructions
Step 1:
Prepare Seasoning
Place macadamia nut oil, ginger, garlic, oregano and curry paste into a large wok
On high heat, sauté for 1 minute until lightly browned
Step 2 (Optional)
Add beef/chicken strips/prawn to wok and sauté for 6 minutes until cooked through thoroughly
For vegetarian option move straight to step 3
Step 3:
Add red cabbage, green cabbage, mange tout, carrots, bean sprouts, salt, pepper and honey to wok and fry for 7 minutes on medium heat.
If contents begins to stick to the bottom of the wok simply add a little water
Remove from heat once cooked
Step 4:
While stir fry is cooking, in a separate frying pan, add sunflower seeds and almonds.
Toast for 1 minute on high heat until lightly browned
Step 5:
Drain Shirataki noodles using a colander
Rinse noodles with cold water
Step 6:
Add rinsed noodles, toasted almonds, sunflower seeds and coriander leaves to stir fry and fry further for 1 minute.
Leave some sunflower seeds and coriander leaves aside for garnishing
Step 7:
Remove stir fry from heat
Top with remaining sunflower seeds and coriander
Serving Suggestion
Serve hot with a slice of lime
