Cauliflower Rice

Rice is such a common accompaniment to many dishes, but unfortunately is not always the best choice when you are watching your carb intake. Luckily we have cauliflower - such a versatile vegetable that can be used to replace just about any carb dish. From wraps and pizza bases, to mash and even rice! This is a staple in my home and a perfect alternative to rice
Ingredients:
1 whole cauliflower
1 lime
2 tsp. cayenne pepper
2 tsp. crushed garlic
3 tsp. pink salt
1 can organic black beans
½ punnet fresh coriander leaves
½ chopped red onion
Instructions
Step 1:
Cut the cauliflower’s bottom off, and peel off the leaves.
Cut it in half and pull apart florets.
Place florets in a food processor, pulsing 4-5 times to create grain like appearance.
Do 2 -3 loads depending on the size of the cauliflower
Step 2:
Place coconut oil, garlic, paprika, lime juice and cayenne pepper in in medium sized pan on high heat and sauté for 1 min
Add cauliflower rice and sauté further for 5 mins
Step 3:
Add chopped coriander leaves
Step 4:
Once cooked, remove cauliflower rice from heat
Top with black beans and red onions
