Cinnamon Spiced Butternut Chips

I absolutely love butternut. It's natural sweetness really comes through when baked or grilled, making it the perfect healthy option for those of you who enjoy a bit of sweet with your savory. Butternut is rich in carotene, Vitamin A, Vitamin B , Fibre and Potassium, making it a super pre or post workout snack. This recipe is so simple to make, requires minimal prep time and is absolutely perfect for a lunch or dinner party. (I make these all the time when I entertain, and they are such a hit!) I usually use an air fryer to make my butternut chips, but these can also be easily made using a standard oven.
Ingredients
Serves: 4-6 people | Ready in 40 mins
1 tbsp. olive oil / coconut oil
1 butternut - cut into thick julienne slices
1 tsp. cinnamon
¼ tsp. ground cloves
½ tsp. Himalayan Pink salt
½ tsp. xylitol / raw honey
Instructions
Preheat Oven to 200⁰C
Step 1:
Lightly grease a large baking tray with olive oil spray
Step 2:
Place butternut slices into a large mixiing bowl
Add olive oil, salt, cinnamon and loves
Toss thoroughly to coat evenly with salt, spices and oil
Step 3:
Spread out coated buttenut julienne slices evenly over greased baking tray
Place in pre-heated oven and oven bake for 30 minutes until cooked
Step 4:
Change oven setting to grill, and continue to cook for 10 minutes or until butternut pieces turn golden brown
Step 5:
Remove from heat and serve alongside your favourite protein or as is with Tahini Mayo
