Eggplant Fries

No one likes the idea of not being able to have fries right? Well you are in luck! These eggplant fries are low carb, low calorie and super good for the body. You can also experiment with other veggies such as beetroot, butternut and sweet potato - these all make wonderful chip alternatives!

Serving Size: 2-3 ppl

Preparation time: 45 minutes including cooking time


Ingredients

1 punnet baby eggplants –thinly sliced

1 tbsp. coconut oil

1 tsp. crushed garlic

2 tsp. dried oregano

1 tsp. dried thyme.

1 tsp. dried rosemary

2 tp. Himalayan salt

Instructions

Step 1:

Place coconut oil in large non-stick frying pan and allow to melt

Add garlic and allow to sauté until lightly brown


Step 2:

Add thinly sliced eggplant, oregano, thyme, and rosemary to pan

Sauté for 7 minutes until eggplant slices begin to go crispy

Stir continuously to prevent burning


Step 3:

Season with Himalayan salt to taste
