Green Beans Napoletana

Sometimes veggies on their own can get a little tiresome. As healthy as they are, even I get over them sometimes. Bringing a little bit of Italy into the kitchen sure helps spice things up a little. This delicious recipe truly transforms plain old green beans into mouthfuls of Italian bliss! And of course...they're healthy too!
Ingredients
1 large packet green beans (ready cut and prepared)
1 punnet cherry tomatoes
2 tsp. white balsamic vinegar
½ onion - diced
2 tsp. crushed garlic
½ cup fresh basil – finely chopped
1 tbsp. olive oil
3 celery stalks –finely chopped
3 tsp. dried oregano
3 tsp. Himalayan salt
Instructions
Step 1:
Lightly steam green beans in stainless steel steam basket for 7 mins to cook slightly
Step 2:
Place cherry tomatoes in food processor and blend to form tomato puree
Step 3:
Place olive oil, garlic, celery, basil, onion, salt, and oregano in large frying pan and sauté until lightly browned
Add lightly steamed green beans and tomato puree and sauté further for approximately 6 minutes
Serve hot and enjoy!
