Paleo Oven Roasted Spiced Butternut with Fresh Coriander

Butternut is hands down my absolute favourite vegetable. It is so incredibly versatile, and its natural sweetness makes it perfect for adding great flavour to soups, salads or to enjoy on its own. This is such a simple recipe to prepare, and I make it regularly. I especially love this recipe because all of the ingredients used here are very rich in antioxidants and anti-inflammatory properties. Butternut is also an excellent source of immune-supportive vitamin A, vitamin C, dietary fibre, vitamin B6, manganese, potassium and vitamin B2. Even better, butternut has been shown to help regulate blood sugar levels! So eat up and enjoy!
Serves 4 |Ready in 40 mins
Ingredients
2 large butternuts – skin removed and diced into thick pieces
2 tbsp. olive oil
1 tsp. cinnamon
½ tsp ground cloves
1 cup fresh coriander – washed and stalks removed
½ tsp. Pink Himalayan salt
Instructions
Step 1:
Pre-heat oven to 180°C
Lightly grease an oven proof baking tray with olive oil spray
Step 2:
In a large mixing bowl, add butternut, olive oil, spices and salt and toss thoroughly until all butternut pieces are well coated
Step 3:
Place butternut pieces on greased baking tray and spread out evenly
Oven roast for 20-30 minutes, checking regularly until brown and crisp on the outside.
Step 4:
Remove from heat and top with fresh coriander leaves.
Serving Suggestion: Serve alongside your favourite protein, and drizzle with tahini
