Basil-Walnut Pesto

This slightly different take on traditional pesto is a great way to change-up this delicious dip. For a thicker chunkier pesto, allow larger pieces of walnut during the crushing process.
You will need:
A good quality food processor or blender
A mortar and pestle
Ingredients
2 punnets fresh basil (you can also try coriander for a little bit of a different flavour fest)
½ cup olive oil
2 tsp. white balsamic vinegar
1 cup crushed walnuts
½ cup parmesan shavings (optional)
1 tsp. fresh lemon juice
2 tsp. Himalayan pink crystal rock salt
1 tsp. ground black pepper
Instructions
Step 1:
Crush walnuts in a mortar and pestle
Step 2:
Add basil and olive oil to food processor and blend until basil appears finely chopped
Step 3:
Add walnuts, parmesan shavings (optional), lemon juice, white balsamic vinegar, salt and pepper to basil-olive oil mixture and blend again until all ingredients form a thick green paste.
Step 4:
Garnish with fresh parsley
Serving Suggestion:
Serve with baked fish, over roasted vegetables or pasta, with health bread, on flaxseed crackers or as a dip accompaniment for raw vegetable sticks
