Macadamia Nut Honey Salsa

The creamy crunch of macadamia nuts coupled with a vinegary tang, raw honey and peppers makes for an absolutely scrumptious dip. Ideal as a healthy accompaniment to raw veggie sticks. The perfect guilt free finger food to serve any cocktail party or get together.
You will need:
Good quality food processor
Mortar and Pestle
Ingredients
1 tbsp. white balsamic vinegar
½ cup extra virgin olive oil
1 cup macadamia nuts
½ tsp. garlic
1 large red pepper
1 tbsp. raw honey
2 tsp. Himalayan pink crystal salt
1 tsp. ground black pepper
1 stalk Parsley to garnish
Instructions
Step 1:
Cut red pepper into quarters
Remove seeds
Step 2:
Crush macadamia nuts using mortar and pestle into small chunks. Do not crush too finely to allow for texture and crunch
Step 3:
Add red peppers, olive oil, garlic, honey, balsamic vinegar and salt to food processor and blend until a thick red paste is formed
Step 4:
Toss in macadamia nuts and stir altogether. Do not blend macadamia nuts as this will take away texture and crunch
Step 5:
Garnish with fresh basil or parsley leaves
Serving Suggestion
Serve over baked sweet potato, over roast vegetables, over beef/vegetarian burger patties, on flaxseed crackers or as an accompaniment to raw vegetable sticks
