Vanilla-Cinnamon Rye French Toast

French Toast is one of my favourite, decadent breakfasts and I'm almost certain it is yours too! You're in luck with this delightful recipe...so healthy, low GI, free of all processed sugar and high in protein...finally we can enjoy French Toast again without any guilt at all!

Serving Size: 1-2

Preparation Time: 20 minutes

Ingredients

2 slices 100% wheat free rye bread or health bread of your choice
2 large eggs
3 tsp. natural sweetener of choice (xylitol/stevia)
1 tsp. vanilla extract
1 tsp. ground cloves
1 tsp. cinnamon
2 tbsp milk of choice (cows milk/almond/soy /rice)
1 tbsp. coconut oil

Toppings

5 Strawberries sliced
½ can coconut cream
Agave/ raw honey/ maple syrup


Instructions


 Step 1

Combine eggs, sweetener, vanilla extract, cloves, cinnamon and milk into bowl and whisk thoroughly until batter becomes pale yellow in colour.

Step 2

Dip rye bread slices into wet mixture and coat thoroughly on both sides until entire slice is covered in batter.

Step 3

Prepare frying pan with coconut oil and allow pan to heat

Step 4

Place soaked rye slices on to frying pan and fry on each side until golden brown and cooked through. Poke with a fork to ensure that batter has been cooked through.
Once battered rye slices are is cooked, allow to cool for 5 minutes.

Serving Suggestion

Top each slice with sliced fresh strawberries, a dollop of coconut cream and a drizzle of raw honey/agave or maple syrup to
taste
