Warm Quinoa Porridge with Coconut Milk

A nice warm porridge on a cold winter’s morning is so comforting. Standard porridges are highly processed and laden with refined carbohydrates. Switch normal porridge mix for quinoa (a healthy, high protein, low GI grain) and enjoy this nourishing taste bud pleaser.


1 cup Quinoa grain

1 cup coconut milk

1 tsp. cinnamon

1 tsp. vanilla extract

2 tsp. natural sweetener of your choice

2 cups water


5 crushed almonds

5 pecans

A small handful of shaved almonds

2 strawberries sliced

A sprinkle of cacao nibs

Maple Syrup


Step 1:
Place 2 cups water in large cooking pot and bring to the boil.
Add quinoa grain and allow to boil for 10 minutes on high heat.
You will know that the quinoa is cooked when it expands and develops a white ring around each grain
Allow to boil further on lower heat until water is fully evaporated

Step 2:
Once quinoa is fully cooked and water has evaporated remove from heat
Add coconut milk, vanilla extract, cinnamon and natural sweetener
Stir thoroughly and return to low heat for 3 minutes

Step 3:
Remove from heat,
Stack with pecans, almonds, cacao nibs, and strawberries
Drizzle with maple syrup to taste
Serve hot
