vegan mousse 2

My Favourite Vegan Choc-Avo Mousse

While avocado and chocolate may sound like a bit of an odd combo, believe me, when it comes to a decadent, creamy mousse, this couldn’t be further from the truth. What is awesome about avocado, is that is has quite a neutral taste so you can flavor it in pretty much any way you like and it will take on that flavor really well. This recipe is quite possibly the quickest, simplest, tastiest chocolate mousse there is. And of course the best part is that this mousse is nutrient rich, high in healthy keep-you-full-for-long fats, contains no sugar and is vegan too! Winning all round!

Vegan Spiced Butternut Pie

Vegan Spiced Butternut Pie

Halloween is just around the corner meaning lots of yummy orange recipes coming your way! I’ve always loved using butternut in dessert dishes because of its natural sweetness. Add a little cinnamon and cloves and you have the most complimentary flavours to work with in just about any cake, muffin or cupcake recipe. Butternut is really great for your body too - It provides plenty of fibre, significant amounts of potassium, important for bone health, and vitamin B6, essential for the proper functioning of both the nervous and immune systems. Tasty and healthy too! The perfect Halloween treat to enjoy with friends and family.

Vegan Cinnamon Spiced Apple Cake with Sticky Date Sauce

Vegan Cinnamon Spiced Apple Cake with Sticky Date Sauce

After asking all of you what you would like to see more of on my blog, I received quite a few requests for healthy cakes, which I was particularly excited about. Nothing quite like transforming traditional cakes into their healthy, svelte opposites, which are often even more delicious than the real thing. This take on apple cake is vegan friendly too! I have included dates in the sauce to make it all the more delicious and caramel like, so if you would prefer the low carb option you can always just exclude the dates, and replace with xylitol. I also don’t use any grains here, instead I have included almond flour for a deliciously moist cake that is lower in carbs. This is the perfect option for afternoon a tea among friends…the guilt free way of course. I hope you enjoy!

Vegan Sweet Potato Cupcakes with Creamy Maple Frosting

Vegan Sweet Potato Cupcakes with Creamy Maple Frosting

I just love using sweet potato in dessert recipes. Firstly sweet potatoes are, well sweet - so they create a beautiful base flavour for just about any baked treat, Then they're super low GI too, which means no crazy blood sugar spikes post-consumption. This is the ultimate healthy cupcake...with frosting too! Rich in healthy fats, high in plant based proteins, rich in vitamins and minerals and packed with anti-inflammatory spices, these are what I like to call super cupcakes.

Low Carb Peanut Butter Cookies

Low Carb Old Fashioned Peanut Butter Cookies

There’s a real deep love out there for peanut butter and so I thought it’s almost an essential to include a peanut butter cookie treat as part of my recipe blog. Natural peanut butter (the one that is literally made from raw peanuts only) is high in omega 3 essential fatty acids, it’s a great source of protein, and a good source of low GI carbs. A little goes a long way when it comes to peanut butter – just 1 tbsp. with an apple or added to a smoothie can help keep you feel satiated for longer. I especially love using peanut butter in snacks or as an addition to breakfast for an extra energy boost. If you are allergic to peanuts you can replace peanut butter in this recipe for almond butter or even macadamia nut butter.

Nutty Hemp Protein Balls 1

Nutty Hemp Protein Balls

I am such a huge fan of hemp seed! I am all about finding ways to increase protein intake the plant based way, and hemp is truly the perfect complete protein source. The protein and fibre in hemp combine to slow digestion, which prevents spikes in blood sugar and therefore sustains the body’s energy. A diet rich in hemp also promotes digestive regularity. When sprinkled on cereal or fruit at breakfast, hemp protein and fibre also helps aid in satiety, which will prevent you from snacking and will keep you fuller for longer.

Cara's Choc Date Squares

Cara's Choc Date Squares

These are so scrumptious, I just can’t wait for you to try!! These still need to be kept a treat because they are high in natural sugars (from dates) but are a great way to get energized before a workout. I love incorporating dates into my cooking – they add natural sweetness, are high in fibre and are so nutrient dense that army veterans can even live on them to stay healthy and energized when food is scarce. Now that makes dates truly worthy of the “miracle food” title. I use eggs in this recipe so these squares are also high in protein. A perfectly delicious, nutritious and healthy snack…oh and a huge hit with the kids!

Vegan Coconut and Almond Protein Balls

Vegan Coconut and Almond Protein Balls

If you're following a vegan lifestyle, it can sometimes be difficult to meet your full protein requirements. Thats why I absolutely love these protein balls. In this recipe I use almonds which are a great source of plant based protein, along with pea protein powder to ensure a full protein kick in each and every bite! Pea protein is a complete protein because it contains all 8 essential amino acids in the same proportions as would whey protein powder, making it an ideal "just-as -good" source of protein for vegans. These are fantastic to snack on for a mid-morning or late afternoon snack to ensure balanced blood-sugar levels and sustained energy.

So many people love the grab and go muffin for breakfast. Unfortunately not always the best choice though, given all the processed refined flours and sugars used to make traditional muffins. Healthy Stawberry Ice-Lollies

Healthy Stawberry Ice-Lollies

Summer holidays are the perfect time for something cool and fresh. Store bought ice lollies are often laden with sugar, that’s why I prefer to make my own homemade ice-lollies. That way I know exactly what ingredients are going in, and I can make sure that they are nutritionally balanced too! These ice-lollies are a rich source of potassium, high in anti-oxidants (from the strawberries, full of fibre and packed with healthy fats. I only use a little xylitol to sweeten just a bit more, but this is not essential as the fruit contains natural sugars. These are such a hit with the kids, and at least you don’t have to worry about any sugar highs. The coconut cream lowers the glycaemic index of these lollies which means that both you and your kids will have sustained energy after enjoying these delicious treats! I hope you enjoy!
