Parmesan Zucchini Fries with Tangy Avo Dipping Sauce

There are truly no words to describe just how delicious these zucchini fries are (they are oven baked so don’t read into the “fries” thing) I honestly feel as if I am cheating when I make this recipe, but the best part is it is totally 100% healthy, guilt-free, low carb…and every other health hashtag in the book. These are fantastic paired alongside a bunless burger patty, or grilled chicken breasts. Oh and the dipping sauce…heaven on earth!
Prep Time: 10 minutes
Cooking Time: 20 minutes
Serves: 4 people
Preheat oven to 200⁰C
Ingredients
1 punnet zucchini, quartered lengthwise
1/2 cup grated Parmesan
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon garlic powder
Kosher salt and freshly ground black pepper, to taste
2 tablespoons olive oil
2 tablespoon chopped fresh parsley leaves
Instructions
Step 1:
Preheat oven to 200⁰C. Coat a baking tray with olive oil/coconut oil cooking spray and place on a baking sheet; set aside.
Step 2:
In a small bowl, combine Parmesan, thyme, oregano, basil, garlic powder, salt and pepper, to taste.
Step 3:
Place zucchini onto prepared baking sheet. Drizzle with olive oil and sprinkle with Parmesan mixture.
Step 4:
Place into oven and bake until tender, about 15 minutes. Change oven setting to grill, and grill for 3-5 minutes (watching closely), or until crisp and golden brown.
Serve immediately, garnished with parsley, if desired.
For Dipping Sauce:
Combine 1 avo, 2 tbsp. smooth cottage cheese, ½ chopped onion, 1 tsp. oregano, 1 tsp. green curry paste, 2 tbsp. tomato paste and 1 tsp xylitol in a blender and blend thoroughly until ingredients are thoroughly combined. Sere alongside zucchini fries
