Cauliflower Mash

Mash is sooo good right! And the best news is, you dont even have to give it up when you are eating healthy, All it takes is some switching up of ingredients and mash becomes a definite go-to side dish for lunch or dinner. Cauliflower is such a gift when it comes to carb replacement, and it really tastes as close as can be to the real thing
Ingredients:
1 cauliflower (approx. 800g) finely chopped
¼ cup vegetable stock
1 onion, sliced
1 clove garlic, smashed
1 tablespoon olive oil
A little sea salt to season
3 tsp. chili flakes
1 tsp. cinnamon
1 tsp. raw honey
Instructions
Step 1:
Sauté onion, honey, cinnamon and garlic in a large pot with the olive oil over a low to medium heat until softened.
Add the finely chopped cauliflower and 1/4 cup vegetable stock.
Step 2:
Cover the pot completely with a tight fitting lid and turn down to heat to a low simmer.
Cook for 5 – 10 minutes, stirring half way through and checking to make sure there is still enough
Liquid to steam the cauliflower. It’s important not to overcook it to keep the fresh flavour intact.
Step 3:
Remove from the heat and place into a good high speed blender
Step 4:
Season with a little sea salt and chili flakes
Blend further until smooth and creamy.
