Sweet Potato Fries

Chips are definitely a weakness of mine...hence the need for a healthy replacement. Enter the sweet potato. Sweet potatoes are the perfect low GI replacement for potatoes, and they may just be tastier too! What do you think?
Ingredients
3 large orange or white sweet potatoes – thinly sliced or cut into wedges
2 tbsp. melted coconut oil
1 tbsp. dried rosemary
Himalayan Salt to taste
Instructions
Step 1:
Preheat oven to 180⁰C.
Spray 2 baking sheets with cooking spray.
Step 2:
For slices: Thinly slice potatoes in a food processor or by hand; they should be no more than 3cm thick.
For wedges: Cut sweet potatoes into thick wedges using sharp knife
Step 3:
Arrange wedges/slices on baking sheets so they don’t overlap.
Brush with melted coconut oil and sprinkle with salt.
Bake chips until they begin to lightly brown, about 15 minutes.
Cool on a rack and serve.
